“In every Ukrainian dessert, there is a piece of history, a story passed down through generations, a celebration of flavors that are both nostalgic and timeless.”
Luba Chachko (Ukrainian food writer)
Paska
To make Ukrainian Paska, mix warm milk, yeast, sugar, and some flour to create a sponge and let it rise. Beat eggs with sugar, then add melted butter, sour cream, vanilla, and lemon zest. Combine with the sponge, add more flour, and knead into a dough. Let it rise until doubled in size. Shape the dough into loaves, place them in greased pans, and let rise again. Bake at 350°F (175°C) until golden brown and a skewer comes out clean. Once cooled, decorate with icing and colorful sprinkles. Enjoy this traditional Easter bread with family and friends.

Medovik
To make Medovik, start by mixing honey, sugar, and butter in a saucepan over low heat until melted. Remove from heat and let it cool. In a bowl, beat eggs with sugar until pale and fluffy. Gradually add the cooled honey mixture, stirring continuously. Sift in flour and baking soda, then knead until the dough is smooth. Divide the dough into 8 equal parts and roll out each portion thinly. Bake the layers until golden brown. Once cooled, spread a generous amount of sweetened sour cream between each layer. Let it chill in the fridge overnight for the flavors to meld.
Grated pie
To make a grated pie, start by mixing flour, sugar, and butter in a bowl until crumbly. Press half of the mixture into the bottom of a greased baking dish. Spread your favorite fruit filling evenly over the crust. Then, sprinkle the remaining crumb mixture over the top. Bake in a preheated oven until golden brown and the fruit filling is bubbling. Allow it to cool before slicing and serving.

“Ukrainian desserts are a true testament to the country’s rich culinary heritage, where simple ingredients are transformed into extraordinary treats.”
Olga Hercules (Ukrainian-British chef and author)
